Homemade Salsa
Another one from my mother-in-law. She is such a great resource for yummy food!! We made this salsa this past summer and it is so great! It is a lot of work, but well worth it!!
INGREDIENTS:
12 tomatoes, peeled & diced
1 cup vinegar
3 to 5 jalapeno peppers
6 to 10 hot peppers, chopped
4 to 5 bell peppers, chopped
4 large onions, chopped
1/3 cup sugar
1 1/2 teaspoons garlic powder
2 teaspoons salt
INSTRUCTIONS:
1. Scald the tomatoes for 1 to 2 minutes in boiling water. (This makes the peels come off really easy.) Dice and put in large stock pot.
2. Chop all the remaining vegetables (I use a food processor).
3. Combine all ingredients in large stock pot and boil for 1 hour.
4. Pour into mason jars
5. Steam bath for 25 minutes.
